How to make dry fried white crucian carp

1. Clean the fish and cut it into pieces.

2. Spread salt and fried powder all over the body and marinate for 10 minutes

3. Prepare the side dishes and mix them according to your preferences.

4. Fry the fish in a pan. Do not use too much oil and half fry and half deep-fry. At the beginning, use high heat to fry until both sides are slightly golden brown, then turn to medium-low heat and fry until the inside is crispy but the outside is not burnt.

5. After frying, remove from the pan, leave some oil in the pan, add minced garlic and ginger slices, and add side dishes.

6. Stir-fry for a few times and pour in the sauce. The sauce is made of dark soy sauce, light soy sauce, vinegar, cooking wine, salt and sugar. Mix well and pour into the pan. Put the fried fish in and stir a few times before serving.

7. When white crucian carp is dry-fried, it won’t have so many small bones and will taste crispy and fragrant. This is a dish I like to make.
