However, some steps in the production process must be paid attention to, so that the quality of the yellow rice wine will be better. The following will introduce in detail the recipe of homemade yellow rice wine, as well as various precautions in the production process.

1. Method

Prepare the following materials: leavener (the yeast used for steaming buns in rural areas, not the finished yeast sold on the market), 20kg wheat, hemp leaves, mold, fresh hemp rope

1. First, wash the wheat with clean water to remove impurities, and then spread it on the roof to dry.

2. Pass the dried wheat through a grinder until it is broken into half pieces, or pass it through an old-fashioned flour mill to separate the flour and the wheat kernels.

3. Soak the leavener in clean water for several hours, then add the crushed wheat and mix well. Make sure it can be shaped by hand. It should not be too dry or too wet.

4. Lay hemp ropes horizontally and vertically on the bottom of the curved mold, and then evenly spread hemp leaves, preferably 6 to 7 layers, and choose larger leaves to lay the bottom.

5. Fill the raw materials into the mold, and press hard at every point to make the stirred wheat raw materials compact. The thickness of the qu should be less than 10 cm, and it should not be filled too thick.

6. After completing the above steps, you can package it. Evenly spread the hemp leaves on the top, and the same as the bottom, with the standard that the internal raw materials are not exposed. When tying the hemp rope, try to pull it tight.

2. Notes:

In the process of making Daqu, hemp leaves and hemp ropes should be selected as materials. This is because hemp leaves generate heat, which can help provide heat for the fermentation of the malt koji. At the same time, the volume of the malt koji gradually decreases during the fermentation process. Fresh hemp ropes will shrink accordingly after drying, ensuring a tight bundle. During the entire bundling process, care must be taken not to expose the raw materials inside, because after fermentation the internal raw materials will first become thinner and then harden. To prevent the raw materials from flowing out, the Daqu should be exposed to the sun after bundling to prevent rain. Generally it will be fine after about a month.
