1.12 Ingredients: • 150g ground beef (40% fat and 60% lean) • 1 box of tofu • 1/4cup brewed soy sauce • 1/4cup kelp stock (dried kelp soup) • 1tsp fine sugar • 1tbs Japanese sake • 1tbs mirin • 2 garlic cloves (larger ones) • 1/2tsp minced ginger • 2 slices of ginger (about 0.5mm each) • 1/4 medium-sized white onion • 2 scallions • Green onions, as needed • 2 dried red peppers (remove the seeds, squeeze out the air and soak in water for 10 minutes) • 1tsp corn starch • Salt, as needed • Freshly ground black pepper, as needed • Sunflower oil, as needed • Water, as needed

2.21 Boil water, add two slices of ginger and salt, and blanch the chopped tofu.

3. Take out the tofu and cool it in cold water. Since the tofu is hot, you can change the water once.

4. Add oil and preheat the pan to 60% hot, add green onions, minced ginger and garlic and stir-fry until fragrant.

5. Add the minced meat and stir-fry until it turns slightly caramelized.

6. Pour in mirin and sake and wait for the alcohol to evaporate completely.

7. Then add soy sauce, kelp juice, black pepper, salt and chopped dried red pepper, simmer for a while and taste.

8. Finally, use a little cold water to dissolve the corn starch and thicken it. Gently shake the pot to make the sauce evenly coated.

9. Add chopped green onions and pour over steaming white rice and enjoy.
