How to cook dry pot fish

1.1 Wash and cut onions and green peppers into appropriate sizes, and put them into the dry pot as the bottom. Cut red pepper and green onion into sections, slice ginger, and chop garlic into large pieces for later use

2.2 After the skinned fish is thawed, clean it and make two cuts on both sides of the fish. Marinate it with salt, dark soy sauce, ginger slices and starch for 20 minutes.

3. Fry the marinated fish until both sides are golden brown.

4. Add cold oil (add more) and pepper, star anise, and cinnamon. Fry until fragrant. Then add dried chili pepper, chopped pepper, and red pepper and stir-fry for a while. Then add scallion, garlic, and ginger slices. Then add a tablespoon of Pixian bean paste, Lao Gan Ma chili oil, and chopped pepper sauce and stir-fry until the oil color is shiny. Add the fried fish and stir-fry evenly. Then put it into the dry pot that has been pre-padded with onions and green peppers.
