9. When the ribs are almost covered with soup (a shallow layer of soup), add the potato cubes and stir-fry for a while. If the potato starch sticks to the pan, you can pour a little water on the edge of the pan.

10. Add carrots and stir-fry for a while. Add 1 spoon of sugar and half a spoon of dark soy sauce. Mix well, cover with lid and simmer for 3 minutes.

11. When the soup is almost dry and the potatoes and carrots are soft, sprinkle with chopped green onions and turn off the heat and serve.
