How to cook soybean pork ribs and bitter gourd

1. Soak the soybeans in clean water for an hour or more in advance. (If you don’t have time, you don’t need to soak it, just extend the cooking time. Add salt, soy sauce, pepper, cooking wine and cornstarch to the ribs and marinate for 10 minutes.

2.1 Cut the bitter gourd in half, remove the seeds and scrape off the pulp, cut it into strips with a slanting knife, put it in a large bowl, sprinkle some salt and mix well, then rinse it with clean water to reduce the bitterness of the bitter gourd.

3.2 Wipe dry the casserole, heat it over medium-low heat, pour in oil, then add shredded ginger and minced garlic and sauté until fragrant, then add the spareribs and stir-fry until they change color, add the soaked soybeans and simmer together, add a little salt, sugar, soy sauce, and half a bowl of water, cover and simmer over low heat for 30 minutes. (Open the lid and stir with chopsticks to prevent it from sticking to the pot. If there is too little water, add some water appropriately).

4. After the soybeans are stewed until they are crispy and soft, turn to medium-high heat, put the bitter gourd into the pot, drizzle with a little oil, stir gently with chopsticks, and stew until the bitter gourd changes color slightly, then add a little salt to taste and turn off the heat.
