How to cook boiled pork liver

1.1 Cut the ginger into shreds, smash the garlic, wash and chop the cabbage, and chop the green onion. Set aside Sichuan peppercorns, dried chili peppers, and Pixian bean paste.

2.2 Wash the liver and remove the white tendons. Soak it in light salt water for half an hour, then pick it up and drain it. Cut into thin slices, add 1 spoon of light soy sauce, 1 spoon of cooking wine, half a spoon of starch, a small amount of pepper powder, mix well and marinate for 15 minutes.

3. Blanch the cabbage in boiling water for 3 minutes, then remove and place in the bottom of a bowl.

4. Heat the oil in a pan, add shredded ginger, garlic cloves, and Pixian bean paste and stir-fry until the oil turns red.

5. Pour in an appropriate amount of boiling water, add a small amount of dark soy sauce and an appropriate amount of salt after boiling. Add the marinated pork liver, stir it with chopsticks, and cook until the liver changes color, then turn off the heat.

6. Pour the pork liver into the bowl with the cabbage and sprinkle with chopped green onions. Heat another pan with oil, add dried chilies and Sichuan peppercorns and sauté over medium heat until fragrant, until the dried chilies change color. Pour hot oil over the liver.
