How to make Macau roast pork

1. Put the pork in cold water, add (boiling) seasonings, and cook the pork until it is 70% to 80% cooked.

Then apply the mixed (spread) seasoning on the surface and in the gaps between the meat. I think cutting the meat into sections is for better flavor. Then insert two bamboo sticks for barbecue skewers into the middle of the meat along the length of the meat to fix the flatness of the meat, because if the pig is grilled, it will naturally bend. Then wrap the surrounding and bottom meat with tin foil, leaving the pig skin, but not covering it.

5.2 Mix the seasonings.

6. Place in baking tray. Place skin side up, place 2-4 scallions on the side, and grill over high heat, 250-300F, for 25-30 minutes.

7. Wait until the skin is roasted until it is charred, and scrape off the burnt layer with a knife.

8. Wait for the pork to cool down a little, then use your fingertips (or other methods will do) to apply a very thin layer of baking soda (this is to loosen the skin during baking. If some of your friends are very healthy eaters and don't like to add such ingredients, you can skip this step), and then apply a layer of oil on it.

9. Put it back in the oven and bake at low heat, 400-450F, for 10 minutes. Pull it out, coat it with oil, and bake for another 10 minutes. Repeat 2-3 times. After baking, slice and serve.
