Lean pork - 3 taels, coriander - 2 taels, ginger - 1 tael, egg - 1, wonton wrapper - 1 jin, dried chilies - 2, dried peppers - several grains, pepper powder - 0.5 tablespoons, pepper powder - 0.5 tablespoons, broth essence - 1 tablespoon, cooking wine - 2 tablespoons, soy sauce - 1 tablespoon, vinegar - 0.5 tablespoons, sesame oil - 1 tablespoon, dried shrimp - 1 tael, seaweed - 1 tael

1. Wash and chop the meat, coriander and ginger

2. Heat oil in a hot pan, add dried chili peppers and Sichuan peppercorns, heat until fragrant, put soup stock and Sichuan pepper powder on the chopped stuffing, pour in the hot oil, take the egg white and put it into the stuffing, add 1 tablespoon of soy sauce and 2 tablespoons of cooking wine, mix well

Tips

2. Tuna Wonton Filling

Material

400g tuna, 200g pork fat, 1/2 cup cold boiled water, 2 scallions, 20g ginger, A. 3/2 tsp salt, 1 tsp MSG, 1 tsp sugar, B. 3/2 tbsp cornstarch, 1 tsp white pepper, 1 tbsp sesame oil

1. Add tuna meat into a blender and blend for about 20 seconds until puree-like.

2. Take a large bowl, take out the tuna meat from step 1 and pour it into the bowl for later use.

3. Chop the pork fat into small pieces and add it to the tuna meat prepared in step 2 and mix until it becomes sticky.

4. Wash and chop the green onion and ginger into fine pieces. Add them together with seasoning A and stir evenly in the same direction.

5. Add the water to the fish filling prepared in step 4 three times, and make sure to stir each time to allow the fish to fully absorb the water. Finally, add seasoning B and mix well.

3. Three Fresh Wonton Filling

Material

200g minced pork, 200g squid, 200g shrimp, 1 scallion, 1 small piece of ginger, 3/4 cup of cold boiled water, A. 3/2 teaspoon salt, 1 teaspoon MSG, 1 teaspoon fine sugar, B. 1 tablespoon cornstarch, 1 teaspoon white pepper, 1 tablespoon sesame oil

1. Wash the scallions and cut into sections; wash the ginger and slice it, put it into a juicer with cold boiled water, and blend it for 20 seconds to make scallion and ginger juice for later use.

2. Wash the shrimp and squid, drain and cut into small cubes for later use.

3. Take a mixing bowl, put the minced pork, diced shrimp and diced squid into the bowl, beat and stir until sticky, then add seasoning A and stir in the same direction until evenly mixed.

4. Take the scallion and ginger juice from step 1 and add it to the minced meat from step 3 in three portions. Make sure to stir it constantly each time you add the scallion and ginger juice so that the minced meat can fully absorb the scallion and ginger juice before adding the next portion.

5. After adding the onion and ginger juice in step 4, add seasoning B in a bowl and stir until well mixed.

6. Take a wonton wrapper, add appropriate amount of fillings from step 5 and wrap them into wontons. Repeat this process until all the ingredients are used up.

7. Take a soup pot, boil the water until it is completely boiling, then throw in the raw wontons wrapped in step 6, turn to low heat and let it boil for about 2 minutes, then scoop out and put it into the soup.
