Half a local chicken, a spare rib, appropriate amount of peppercorns, star anise, eggs, bay leaves, shallots, old ginger, pepper, salt, and cooking wine.

1. Prepare all the ingredients in advance. To ensure the deliciousness of the soup, it is recommended to use pheasants and native pigs raised by farmers (they have a pure taste). Clean the chicken in advance and cut it into pieces, remove all the accessories (remove the heart, lungs, and kidneys to avoid affecting the taste of the soup, remember to remove them), wash and chop the pork ribs into pieces for later use.

2. Pour clean water into the pot, put the sliced ​​old ginger, star anise, bay leaves, cooking wine and peppercorns into the pot, add the chopped chicken pieces and ribs into the cold water, boil and remove (this can effectively remove the fishy smell of the meat). Rinse the chicken pieces and ribs with running water, remove the foam on the surface and set aside. Take out the casserole and pour in clean water. Put the rinsed chicken and ribs into the pot with cold water. (Note that the water needs to completely cover the meat. Fill the pot with water at one time. Do not add water in the middle to avoid affecting the taste of the chicken soup.)

3. Bring to a boil over high heat, then turn to low heat and simmer for 3-4 hours. After a few hours, the fragrant chicken soup can be eaten. But there is a key step. Beat the eggs into a bowl and mix well. Quickly pour the boiled chicken soup into the egg liquid, add chopped green onions, sprinkle with pepper and appropriate amount of salt. A bowl of delicious and mouth-watering soup is truly ready. Drink it while it's hot.

Tips:

1. When making soup, you must choose fresh farm pigs and chickens, so that the taste will be more delicious.

2. Put the ingredients into the pot with cold water and add spices to remove the fishy smell of the ingredients. When you are actually cooking the soup, you don’t need to add spices anymore, so as to ensure the original flavor of the soup.

3. Remember to add water in the middle of the soup cooking process. Adding enough water at one time will make the soup taste richer.

4. When making frangipani, be sure to quickly pour in boiling water and add the chicken soup while stirring.
