How to make steamed meat

In order to solve this problem, I will now teach you how to make steamed meat with rotten meat.

1. Wash the pork belly, put it in boiling water, add cooking wine, soy sauce, green onion, ginger, star anise and fennel.

2. Skim off the blood and cook until 80% cooked. During the cooking process, a lot of fat in the fat is cooked out, so the finished product will not be greasy.

3. Put three pieces of rotten meat in a bowl, pour in the rotten meat water, and crush the rotten meat pieces with the back of a spoon.

4. Shred the green onion and mince the ginger (the ginger in the picture is not completely chopped)

5. Add chopped green onion, minced ginger, star anise, sugar, light soy sauce and aged vinegar to the fermented bean curd juice. Do not add salt as the fermented bean curd and light soy sauce are already salty enough.

6. After the pork belly is cooked, cut it into sections and then into slices. The meat slices don’t need to be very thin, just thicker than those for preserved vegetable pork. (I love to chew on pork with fermented bean curd) Dip the pork belly slices into the prepared fermented bean curd sauce and evenly dip them, then place them skin side down in a large bowl.

7. Pour the remaining fermented bean curd juice into a large bowl and steam it in a steamer. Bring to a boil over high heat and steam over low heat for 1-2 hours.

8. Place the steamed fermented bean curd meat upside down on a plate with the skin on top. The taste of fermented bean curd meat is different from other steamed meats. The meat becomes very tender and smooth after being marinated in fermented bean curd, and your mouth is full of fragrance when chewing the shredded meat.
