Turmeric Steamed Chicken Recipe

1. From left to right: turmeric powder, ginger powder, white pepper powder, sea salt

2. Spread half of the ginger slices and green onion slices on the bottom of the plate

3. Wash the chicken, dry it with a paper towel, and remove the chicken breast to cook other dishes.

4. Expand the chicken into a "butterfly shape"

5. Apply a little wine evenly on the surface and inside of the chicken (if you use wine, you can skip it, I usually don’t use wine), then apply salt, white pepper, ginger powder and turmeric powder all over the chicken inside and outside

6. Leave it for at least 30 minutes to marinate (when marinating the chicken, don’t put too much salt, because there will be dipping sauce afterwards. If you put too much salt before steaming, it will be too salty and there is no way to save it; add turmeric according to personal taste. If you like a stronger flavor, put a little more, and if you like a light turmeric flavor, put less)

7. Boil water in a pot, put the chicken in and steam for about 20 minutes after the water boils. When the time is almost up, open the lid and insert chopsticks into the thickest part of the chicken. Remove the chopsticks. If the water flowing out of the hole is bloody, you need to steam it a little longer. If the water flowing out is clear, it means it is done... I steamed it for 20 minutes (note that because I took out the chicken breast in advance and each chicken is of different sizes, the steaming time needs to be adjusted as appropriate)

8. After steaming, set aside until it is not too hot to chop; now you can start preparing the dipping sauce: put a little chicken stock and a little soy sauce in a small dish, put a large amount of minced ginger and an appropriate amount of chopped green onion on the surface; boil a little oil in a pot, pour it on the surface of the ginger and green onion, and then scoop in some of the "chicken soup" in the dish after steaming the chicken, mix well, and add a little sesame oil if you like (the dipping sauce cannot be omitted, otherwise it will not taste good enough. Of course, you can also use other dipping sauces according to your own taste. The soup left over from steaming the chicken is very fresh, and adding it to the dipping sauce will make the dipping sauce more juicy and not all oily... Don't put too much soy sauce, otherwise it will be salty)
