1. If you don’t know how to kill the fish, but ask the fishmonger in the vegetable market to help you kill the fish, then the time from killing the fish to cooking should not exceed 1 hour, otherwise the fish meat will not be fresh)

2. Put the marinated yellow catfish into a bowl with white steamed vegetable powder, and evenly coat both sides with the steamed vegetable powder (Note: Do not wash the marinated fish, directly coat the powder with the marinated fish juice, otherwise the fish meat will have no taste)

3. Shake off the excess powder and put it into the steamer

4. Put it into the steamer, bring to a boil over high heat, then reduce the heat to low and steam for about 10 minutes. Tuotuo Ma is steamed on the steaming grid of the rice cooker. When the rice is cooked, the fish is cooked. This is more convenient. But if you use a rice cooker to steam, there is one thing you must remember, that is, you must take the fish out as soon as the rice jumps. Do not leave the fish on the rice for too long. If you delay for a while, the fish meat will become tough and will not taste good.

5. Pour a small amount of oil and half a bowl of water into the wok, add minced ginger, a small amount of salt, chicken essence, pepper and dark soy sauce, a large shovel of vinegar, bring to a boil over high heat, then add appropriate amount of water starch to thicken.

6. Finally, pour the sauce evenly on the fish and sprinkle with chopped green onions. If you like the taste of raw vinegar, you can also pour the raw vinegar directly on the fish without adding starch.
