No-oil frying method

1. Soak the roasted gluten, dried shiitake mushrooms, dried black fungus and dried day lily in clean water until they are swollen. After the shiitake mushrooms and black fungus are soaked, remove the roots, wash off the mud and sand on the surface, and tear the black fungus into small pieces.

2. After the roasted gluten is soaked, cut it into 1 cm square pieces. Put clean water in a pot and bring to a boil over high heat. Blanch it in the hot water for 1 minute and remove it from the pot for later use.

3. After soaking the daylily, remove the roots, blanch it in hot water for 1 minute, then remove and set aside.

4. Cut the bamboo shoots into dice and blanch them in hot water for 3 minutes, then remove and set aside.

5. Prepare a small bowl, pour in light soy sauce, dark soy sauce, cooking wine, sugar and salt, mix into juice and set aside.

6. In another pot, add a small amount of oil and stir-fry the bamboo shoots first.

7. Then pour in the fungus.

8. Add mushrooms and day lily and stir-fry evenly.

9. Then add the roasted bran and stir well.

10. Pour in 1/2 of the soup just prepared, add appropriate amount of water, cover the pot and simmer on medium heat for 10 minutes; then pour in another 1/2 of the soup and continue to simmer for 10 minutes.
