How to make spicy braised potatoes

1. Wash and peel the potatoes, cut into dice, soak in water and set aside, changing the water twice to remove starch.

2. Slice the onion, ginger and garlic, cut the dried chili into rings, and set aside the peppercorns, star anise, cinnamon, bay leaves and rock sugar.

3. Heat the pan with cold oil, add the potato cubes and fry until the surface is slightly golden brown. Remove from the pan and set aside.

4. Now let's fry the sugar color. The ratio of oil to sugar is 1:2. You can also fry more sugar color at one time and save it for later use. Without turning on the fire yet, add half a spoon of cooking oil and a spoon of white sugar into the pot, then turn on low heat and stir constantly with a spatula until the sugar melts, starts to bubble and turns caramel color.

5. Turn off the heat and continue stirring with a spatula. When the temperature of the pot drops slightly, pour in an appropriate amount of hot water and stir well.

6. Pour in potatoes and stir-fry until evenly coated with sugar color.

7. Add onion, ginger, garlic, peppercorns, dried chili peppers, star anise, cinnamon, bay leaves and rock sugar and stir-fry over low heat until fragrant.

8. Add appropriate amount of delicious soy sauce, a little vinegar and mix well, add hot water to cover the ingredients, bring to a boil over high heat, cover and turn to low heat.

9. Stew until the potatoes are soft, then turn to high heat and add salt and chicken stock.
