1. The pork belly does not need to be cut into small pieces. Wash it and put it in a pot with water and boil it. The cooking time should not be too long, just boil the water. Remember to boil it together with the water, and do not wait until the water boils before putting the pork belly in. Drain the pork belly and put it into a hot pan without adding oil. Stir-fry the pork belly until both sides change color slightly.

2. Add appropriate amount of oyster sauce. Add a little soy sauce, cook until fragrant, stir briefly a few times, then pour in an appropriate amount of cooking wine to let the aroma of the cooking wine permeate the pork belly.

3. When the seasonings in the pot start to sizzle and the aroma comes out of the hot steam, add the garlic cloves and ginger slices to season the pot.

4. After briefly stirring, add cinnamon, fennel, bay leaves and dried chilies and sauté until fragrant. Add appropriate amount of hot water into the pot, enough to cover the pork belly.

5. Cover the pot and simmer on high heat for 50 minutes. Pay attention to the situation in the pot and add water at any time. After about 50 minutes, turn to low heat and simmer for about 20 minutes. When the sauce in the pot is basically absorbed, lightly poke the pork belly with chopsticks. When you can easily penetrate it, it is ready to be served.

6. While the pork belly is stewing in the pot, you can make the sauce. Add a little chopped ginger and garlic, half a spoonful of soy sauce, a little MSG, 2 spoonfuls of vinegar, and 3 drops of sesame oil to make the sauce.
