1. Mushroom goose soup

Main ingredients: half goose meat, 300g mushrooms

1. Cut the skinned goose meat into pieces and wash it. After the water boils, blanch the goose meat to remove the blood.

2. After the oil is hot, add the chopped seasonings and fry until fragrant. Add the goose meat and some cooking wine and fry until fragrant. Add a large bowl of water.

3. When the goose meat is almost cooked, add the mushrooms and cook for another fifteen minutes, then add salt.

2. Hawthorn goose meat soup

Ingredients: 250g goose meat, 30g hawthorn, 10g chicken gizzard lining, 6g tangerine peel,

Method: 1. Clean the old goose, chop it into pieces, put it into a pot of cold water, add cooking wine, peppercorns, a little salt, boil it over high heat, pick up the goose meat, wash it and drain the water

2. Bring the water to a boil in a stew pot, add goose meat, smashed ginger, and green onions, and stew for 2 hours.

3. While stewing the goose, use another wok to fry the seafood mushrooms and stropharia with lard. After the goose is stewed for 2 hours, add the fried seafood mushrooms, stropharia, yam cubes, and pickled radish cubes into the stew pot and stew for 30 minutes until all the ingredients are cooked.

4. Add appropriate amount of salt, pepper and chicken essence before serving, and simmer for 5 minutes.

3. Yam stewed goose soup

Ingredients: a native goose, iron stick yam, and wolfberry.

Preparation method:

1. Peel the yam, wash the goose, drain the water, and chop into large pieces;

2. Put the goose pieces in a pot with cold water and bring to a boil over high heat. Take them out and rinse off the foam and impurities on the surface of the goose pieces with warm water.

3 Put the washed goose pieces into the casserole, add enough hot water at one time, bring to a boil over high heat, add scallion and ginger slices, turn to low heat and simmer for about 40 minutes

4. Add the diced yam and continue to simmer over low heat;

5. Stew until the yam is soft, season with salt, and sprinkle in the washed wolfberries five minutes before removing from the heat.
