How to make focaccia pizza

The most important thing about making focaccia pizza is choosing the ratio of flour to high-gluten flour. Once the ratio is chosen, it’s time to add water and knead the dough. The second thing is to choose a suitable size. If you don’t have a mold, you can adjust the size of the cake according to the size of your palm. Because different sizes of focaccia require different heat and ingredients, and attention should be paid to the chemical reaction of the ingredients, not all ingredients can be put together.

Focaccia pizza dough steps

Just mix the flour and high-gluten flour, add olive oil, salt, yeast, sugar, and then mix with water. Note: Salt and yeast should be separated as they are incompatible. Add 2/3 of water first, then slowly add the rest of the water. The water temperature should be room temperature in summer and 40℃ in winter. Knead the dough for nearly 10 minutes. After kneading, divide it into dough. The size depends on your taste. Basically, 9 inches is 110-120g of dough, and 12 inches is about 145g. Place the dough in a container, cover with plastic wrap, and let it ferment for 30-60 minutes. While the dough is fermenting, you can make tomato sauce. Use 1500g peeled tomatoes, 20g cooked pine nuts, 20g sugar, 10g salt, 1-2g pizza grass leaves, and 3-5g basil leaves. Mix and crush.

How to make pancakes

Take out the dough, start from the center, pinch the center to make it thin, and then slowly spread it outwards. When it becomes two palm-sized pancakes, spread flour underneath, put the pancake skin on top, and turn it with your palms, pulling it to both sides while turning. Be careful not to use too much force or it will tear! Pull it into a circle or any shape you want. Apply tomato sauce and sprinkle cheese evenly, leaving a two-finger-wide gap on the edge, and sprinkle the fillings on with whatever fillings you like. It is best to sprinkle some cheese on top after spreading the filling. The oven temperature should be around 280°C, and for beginners, it should be around 250°C. Put the prepared pizza into the oven and bake for 3 minutes. The specific time depends on the color of the edge of the pizza. It is done when the color turns golden yellow.

You must pay attention. It looks simple, but the key is the crust. The thickness of the crust should be even. It doesn’t matter if you try to make it thicker in the early stage. Our crust can be baked into two layers without fillings. The middle is empty. You can remove one side and wear it as a hat. So, practice makes perfect.
