How to make Shaoyang rice noodle sauce

Shaoyang rice noodle sauce is a famous snack in Shaoyang, Hunan. It has a very long history and has now become a way of life for local residents. Anyone who comes to Shaoyang must try a bowl of Shaoyang rice noodles with sauce. The rice noodles are made through multiple processes such as rice selection and fermentation. The noodles are white, round, slender and elastic. They can be eaten after being boiled in boiling water and adding seasonings. They are paired with the local unique臊子汤, which has a smooth texture, mellow and delicious taste, leaving people with endless aftertaste.

1. Ingredients

A bag of lotus seed rice noodles, half a pound of pork front leg meat, two pork shanks, chopped pickled vegetables, sweet potato starch, bean paste, red chili oil, Sichuan pepper powder, white pepper powder, ginger, light soy sauce, dark soy sauce, and garlic.

2. Steps

1. Rinse the pork shanks first, then blanch them in boiling water for a few minutes. After rinsing off the blood foam, add crushed ginger and simmer for about 3 hours. Soak the rice noodles in boiling water for 10 minutes, then rinse them in cold water, drain and set aside.

2. While the soup is boiling in the pot and the rice noodles are ready, you can start chopping the meat. Cut the pork into small pieces first, then chop it into minced meat. After chopping the minced meat, add bean paste, light soy sauce and cooking wine, knead it evenly with your hands, and marinate for more than ten minutes. Chop the ginger and garlic, and cut the green onion into chopped green onions.

3. Add moistened starch to the marinated minced meat and mix well. It should not be too dry. You can add a little more water. The best way to mix it is by hand, just wear disposable gloves.

4. Heat oil in a pan. When the oil is 80% hot, add the minced meat and stir-fry. Then add ginger and garlic. Add cooking wine, a little white pepper powder, and an appropriate amount of dark soy sauce according to the color. Turn to low heat and slowly force the oil out of the fat in the minced meat. At this time, the aroma will come out.

5. Stir-fry over low heat for about ten minutes and a bowl of delicious meat stew will be ready. Boil water in a pot. When the water boils, add the rice noodles and blanch them until cooked.

5. Put appropriate amount of salt and chicken essence at the bottom of the bowl, scoop the cooked rice noodles into the bowl, and then pour the steaming hot pork bone soup from the casserole on it. Scoop up a spoonful of oily meat sauce, add some preserved vegetables, sprinkle some chopped green onions and pepper powder, and drizzle some red chili oil, and voila!
