How to make steamed duck with pickled mustard greens

1. Wash and drain the dried plums

2.1 Blanch the duck and rinse off the blood

3.2 Wash the duck and select the whole piece

4.1 Remove from the water and drain the brine

5.2Put it in the brine pot and cook until it is cooked, then soak it in the brine for about 3 hours

6.1 Put about 40ml of oil in a wok and heat it to 50-60% hot. Place the braised duck skin side down.

7.2 Cut the bacon into small pieces about 0.6cm square, chop the garlic and pickled peppers

8.1 Take out the fried duck and turn up the heat. Add the peppercorns and fry them.

9.2 Turn down the heat to medium-low and fry until the duck skin turns golden brown.

10.1 Add bacon granules and a tablespoon of fermented black beans

11.2 Add minced garlic and pickled chili peppers and stir fry for a while

12. Stir-fry until the bacon releases oil and the fermented black beans release fragrance

13. Pour in the pickled mustard greens, stir fry for a few times and turn off the heat. Leave the greens in the pot without scooping them out.

14. Cut the roasted duck into strips about 2-3cm wide.

15. Spread a layer of dark soy sauce on the bottom of the bowl (about 1/4 spoon)

16. Place the duck skin on the bottom of the bowl

17. Put the pickled mustard greens and bacon in the pot into a bowl to cover the duck, press the pickled mustard greens slightly, add a little sugar, and sprinkle a little salt and MSG on the pickled mustard greens.

18. Cover the bowl with a plate, put it into the pressure cooker and steam it on medium-low heat for 20-25 minutes. After steaming, turn it upside down on the plate
