How to make gourd and meat dumplings

1. Wash and peel 1 bottle gourd.

2. Take half of the bottle gourd and shred it using a grater.

3. Wash and chop the green onions.

4. Wash and dice the pork, with a fat-to-lean ratio of 2:8.

5. Chop the pork into small pieces, add water in portions and stir until it becomes firm. Finally, add salt and soy sauce to season and stir evenly.

6. Take an appropriate amount of flour and stir it into a small dough with cold water.

7. Knead into a smooth dough and let it rest for about ten minutes.

8. Roll the dough into large dumpling wrappers and use a bottle cap to press out dumpling wrappers of uniform size.

9.Mix the minced pork and shredded gourd evenly.

10. Take appropriate amount of meat filling and make dumplings.

11. Store some dumplings in the refrigerator.

12. Boil water in a pot, add dumplings and cook until done.

13. When eating, adjust the dipping sauce according to your personal preference. I use garlic vinegar sauce made from white vinegar, soy sauce (1:1) and minced garlic.
