How to stir-fry pork tenderloin

Stir-fried shredded pork tenderloin is a food made with pork tenderloin as the main raw material. The tenderloin is cut into shreds and then seasoned with cooking wine, salt and other condiments. Method 1:

Step 1

Wash the pork tenderloin, cut it into 0.3 cm slices, and then cut it into 5 cm long and 0.3 cm wide strips. Cut the bamboo shoots into thin strips. Cut the green garlic into sections.

Step 2

Add starch to water to make wet starch, and mix the tenderloin with egg white, wet starch and fine salt.

Step 3

Put cooking wine, 50 grams of broth, fine salt and wet starch into a bowl and mix into sauce.

Step 4

Put peanut oil in a wok and heat it to 50% hot. Add the shredded meat and cut it with chopsticks. After the aroma comes out, pour it into a colander to drain the oil.

Step 5

Leave about 40g of oil in the pot, add chopped green onion and stir-fry until fragrant, then pour in shredded bamboo shoots, green garlic segments, and the shredded pork that has been drained of oil. Pour in the prepared starch sauce, toss a few times, add chicken essence to season, and serve.

Tips

If you don’t have clear soup when making the sauce, water will do, the taste will just be slightly different.

Wash the tenderloin, slice it into slices, then cut it into strips and put it into a bowl

Step 2

Add starch, egg white, refined salt and cooking wine to the shredded meat.

Step 3

Mix the shredded pork with the seasoning and marinate for 5 minutes

Step 4

Boil water in a pot, add the marinated shredded pork in batches, cut the shredded pork with chopsticks, and cook until cooked.

Step 5

Pour the shredded meat into a colander to drain

Step 6

Heat peanut oil in a pan until 50% hot, add minced ginger and stir-fry until fragrant

Step 7

Add shredded pork and stir fry

Step 8

Lettuce cut into thin strips

Step 9

Add broth and bring to a boil, then add shredded lettuce and serve.

Method 3:

Step 1 : Cut the tenderloin into large pieces, slice it into thin slices and cut it into strips, and cut the green pepper into strips.

Step 2: Coat the shredded meat with starch, cooking wine, a little salt, and wet starch, then add salad oil.

Step 3 : Add the sauce: cooking wine, salt, sugar, MSG, wet starch

Step 4: Add oil to the pan, heat the oil to 30% to 40%, add the shredded meat and stir with chopsticks, add the shredded green pepper, and drain the meat and green pepper.

Step 5 Pour the shredded pork and green pepper directly into the pot and stir-fry, add a little salt and MSG, drizzle with oil and serve.
