1. Mix all the ingredients except butter (250g high-gluten flour, 4g dry yeast, 2g salt, 33g fine sugar, 48g milk, 100g plain yogurt, 25g egg).

10. Divide the dough into three even portions, roll each portion into a ball and let it relax for 20 minutes.

11. Roll it out into an ox tongue shape, and roll it up from top to bottom (if the dough rebounds a lot and is not easy to roll out, it is because the relaxation time is not enough). Do not roll it too tightly, continue to relax for about 15 minutes, then continue to roll it out into an ox tongue shape, still rolling it up from top to bottom, stick the bottom tightly, and ferment it for the second time until it is 80% full.

12. Bake in the oven at 180 degrees for about 40 minutes (after the surface of the dough is colored, immediately cover it with tin foil). After taking it out of the oven, remove it from the mold and let it cool.
