4.2 Take out the large dough that has been fermented to twice its size from the fermenter, weigh it into 18 small doughs of 50 grams each, cover them with film and let them stand for 15 minutes.

5. Put the prepared toast into the fermentation box for secondary fermentation (time: 50 minutes) until it reaches the middle and high position of the mold. After taking it out, brush the surface of the toast with egg liquid

6. Put a bowl of water at the bottom of the oven, set the oven to 170 degrees, and preheat the upper and lower fire for 5 minutes; fill the inside of the oven with steam. Maintain humidity and constant temperature.

7. Put the toast in the middle and lower layers of the oven and bake for 20 minutes. When the surface of the toast turns golden yellow, wrap it with tin foil and continue baking for another 5 minutes before taking it out of the oven.

8. Gently tap the toast mold on the inverted mold to remove it from the mold. The freshly baked milk toast has a rich milky aroma and moderate sweetness!
