How to make Purple Sweet Potato CHIFFON CAKE (8 inches)

1. Cut the purple sweet potato into pieces and steam them. Use a spoon or rolling pin to mash the purple sweet potato into puree and set aside.

2. Separate the egg white and egg yolk; To make the egg yolk paste: add 20 grams of fine sugar to the egg yolk and stir well. Add 3 tablespoons of salad oil and 3 tablespoons of milk, each spoon is 15 ml, and stir well. Sieve 60g of low-gluten flour, 1/4 spoon of salt and 1/4 spoon of baking powder together and add to the egg yolk paste. Use a rubber spatula to gently stir evenly and set aside.

3. Squeeze lemon juice into the egg white, about the amount of half a fresh lemon. (If using concentrated lemon juice, add 1/4 spoon only.) Use an electric whisk to start beating the egg whites, and add the remaining 40g of fine sugar in 3 times (when the egg whites are beaten into fish-eye bubble shape, add 1/3; continue beating until the egg whites begin to thicken and form coarse foam, then add another 1/3; then continue beating until the egg whites are relatively thick and lines appear on the surface, then add the remaining 1/3 of sugar). When the whisk is lifted vertically, the egg white paste can be pulled into a short upright point, that is, it has reached a hard foam state.

4. Add purple sweet potato puree to egg yolk paste and mix well. Pour the egg white paste into the egg yolk paste in two batches. First pour in 1/3 of the egg white paste and stir evenly, then pour in the rest. When stirring, be sure to stir it evenly like you are cooking, and stir from the bottom up.

5. After mixing, pour into the cake mold, hold it on the table with both hands and shake it vigorously a few times to squeeze out the bubbles. Put it in the upper middle layer of the preheated oven, set it to 130℃ and bake for 35 minutes. 
