Fern cake is a common "vegetarian food" on the tables of ordinary people, and some people call it wild vegetable. There are many ways to eat fern cake, which has the effect of clearing away heat and detoxifying. In particular, its rich dietary fiber is beneficial to human health. Fried fern cake with bacon is a very famous home-cooked dish in Hunan. How should this delicious dish be made? What foods need to be prepared in advance when making it?

Salt, chicken essence, sesame oil, oyster sauce, cooking wine, ginger, green garlic

Production steps

1. Steam the whole piece of bacon for 20 minutes, let it cool and cut it into thin slices;

2. Break the fern cake in half and cut into thin slices;

3. Cut ginger into shreds; cut green garlic into segments

4. Heat the pan until oil is 50% hot, add shredded ginger and fry until fragrant.

5. Add bacon slices and fern slices and stir-fry for a while

6. Add green garlic and stir-fry until cooked, then add seasonings and stir-fry evenly until the flavors are absorbed.

Method 2

First, cook the bacon until it is 80% to 90% done. Bacon is relatively salty. After boiling in water, some of the salt in the bacon will be cooked out. If it is not boiled in water, stir-frying will easily make the meat very dry, so be sure to boil the bacon first. Then cut it into slices, making sure the lean meat and fat are cut separately.

You can prepare an egg here, of course you don’t have to prepare an egg. Since there are not many eyelash fern cakes at home, I added an egg, and the result was better. Mix the egg yolk and egg white.

Add half a bowl of water to half the fern cake powder, stir well, then pour in the eggs and continue stirring, then add salt and garlic. It is best to taste it to see if the taste is right, especially whether the salt is too salty or too bland.

Heat the pan and pour in vegetable oil. Note that you should use a frying pan so that the oil can be more evenly distributed. At the same time, do not have too much oil, otherwise it will taste greasy.

After the oil is hot, turn the heat to low and use a large spoon to scoop a spoonful into the pot. If it feels uneven in the pot, shake it appropriately.

When you think the bottom layer is almost cooked, use a spatula to scrape around it, then quickly turn it over and continue frying. When it is cooked, serve it and repeat the above steps to fry the rest of the fern. You may need to add oil during this process, so pay attention to the amount.

After frying everything, wait for the fern cake to cool down, then stack the fern cake pieces, flatten them and cut them into pieces.

Start frying the bacon. Put the fat into the pot first. After half of the oil comes out, you can add the chili and minced ginger. After frying for a while, add the lean meat. After frying for one or two minutes, you can add the fern cake and stir-fry evenly.

Just add garlic sprouts and serve. A simple dish is ready.
