1. Buy hawthorns, wash them in advance and dry them. Take a hawthorn and scrape off the black part at the bottom with a knife.

Then hold half of the hawthorn in each hand and twist them in opposite directions to open it. Pinch the half with the core and the core will separate from the flesh. 3. To make candied haws, the most critical step is actually boiling the sugar. Put rock sugar and water into a pot, bring to a boil over high heat, and melt the rock sugar. Do not stir it. You can lift the pot and shake it slightly to allow the sugar water to heat more evenly. Be sure not to shake it too much to prevent the frosting from crystallizing on the wall. After the sugar water turns into fine foam, you must not leave at this time. Look carefully at the color of the sugar. When it turns into the color of 5, that is, there is a circle of light yellow around it, quickly turn to low heat; dip some sugar with chopsticks, put them in cold water, take out and bite, if it is crispy, it means it is cooked. If the sugar is cooked well, the foam will turn into a light yellow color, and it will become stringy when you dip chopsticks in it. Turn off the heat immediately and leave the fire. Roll the skewered candied haws on it and place them on baking paper to cool.
