1. Before pickling peppers, you should first understand the ratio of peppers to soy sauce and salt. The ratio between them should be ten to five to one, which means that ten kilograms of peppers should require five kilograms of soy sauce and one kilogram of salt. In addition, prepare 200 grams of white sugar, ginger, garlic and salad oil. Finally, 350 grams of high-purity liquor, a small amount of pepper, aniseed, cinnamon, and onion will be enough.

2. Clean the purchased peppers, wash them with clean water first, then remove the stems, and then place them on a permeable material to drain the water. After the water is completely drained, you can use a knife to make a few small cuts on each pepper to make it easier for the peppers to absorb the flavor.

3. Pour the prepared five pounds of soy sauce into the pot, turn on the heat and bring to a boil, then pour into a bowl and set aside. Then pour the salad oil into the pot and heat it, then put in all the prepared spices, such as aniseed, pepper and cinnamon, stir-fry until fragrant, and then add the sugar. Make into sauce.

4. Mix the prepared sauce and cooked soy sauce thoroughly and set aside. Put the processed peppers in a pickled vegetable jar, then add all the prepared sauce into it, making sure the sauce covers the peppers. Then turn it over every day thereafter. After about seven days, the pepper pickles will be ready to eat.
