The so-called Ma Shi is a kind of pasta originated in Shaanxi. It is shaped like a finger-sized lump of dough and is often called cat ears. Below I will explain to you how to make casserole ma shi. 1. Methods

Materials preparation:

500 grams of flour, pork lean meat, potatoes, cowpeas, carrots, eggs, tofu, radish, chicken, ham, green vegetables, onions, ginger, peanut oil, soy sauce, vinegar, salt, MSG, broth, chili oil, garlic cloves, etc.

1. Mix flour and water into dough, knead it thoroughly and add a little sugar. Roll it into bean-sized pieces. Use your thumb to press the dough on the chopping board and roll it into a hollow, jujube-shaped hemp dough.

2. Chop pork, tofu, radish, chicken, ham, and green vegetables into small cubes, and cut green onions and ginger into shreds.

3. Add a little peanut oil into the pot, heat it up and sauté shredded green onion and ginger. Add pork, tofu, radish, chicken, ham, vegetables and other ingredients, stir-fry until 70% hot, add broth, salt, soy sauce, vinegar, and MSG. After boiling, add the raw hemp dough and simmer until the soup is thick. You can add some chili oil, garlic, etc. when eating.

2. Method of stewing sesame seeds

Ingredients:

500g hemp food, 1 potato, 1 carrot, 1 green pepper, 2 tomatoes, 1 piece of meat

Excipients:

1 scallion, 5 cloves of garlic, 2 cabbages, 1 garlic sprout, 1 spoon of soy sauce, 1 spoon of salt, some cooking wine

method:

1. Buy hemp food and keep it ready for use.

2. Wash potatoes, carrots, tomatoes, garlic, green peppers and onions and set aside.

3. Wash the Chinese cabbage and garlic sprouts and set aside.

4. Heat the pan with oil, add the chopped meat and fry until cooked, add cooking wine to remove the fishy smell, and add soy sauce to color.

5. Add scallions and stir-fry until fragrant. Add chopped potatoes and carrot slices and stir-fry until they change color. Pour in appropriate amount of water and bring to a boil. Throw in green leafy vegetables, garlic sprouts, and salt to taste.

6. Boil water in another pot and add the hemp into the pot and cook.

7. Pour the spicy food into the fried vegetable sauce and serve.

3. How to cook the spicy food

Ingredients:

400g flour. 3 black fungus, 1 tomato, 20g celery, 1/2 carrot, 5g chopped green onion, 25ml oil. 5ml soy sauce, 3g salt.

1. Put the flour into a bowl, add a little salt, add clean water (cold water) and stir with chopsticks until it becomes floc-like, then knead it into a slightly harder dough with your hands. Cover the kneaded dough with a damp cloth or plastic wrap and let it rest for 20 minutes.

2. Wash the black fungus after soaking and cut it into small pieces. Wash, peel and cut carrots into small cubes. Wash, peel and cut tomatoes into pieces. Wash the celery and cut into small pieces. [1]

3. Heat the oil in a pan over high heat until it is 70% hot. Add the chopped green onion and stir-fry until fragrant. Then add the tomatoes, black fungus and diced carrots and stir-fry for a few times. Then add the celery pieces, soy sauce and appropriate amount of water, stir-fry evenly, add salt to taste and serve as a side dish.

4. Place the dough on the chopping board and knead it repeatedly until the surface is smooth, then roll it into a pancake about 1 cm thick.

5. Cut into thin strips about 1 cm wide.

6. Cut the noodles into small pieces of 1 cm square.

7. Take a small piece of dough, press it lightly on the bamboo mat with your thumb, then rub it forward along the trend, and a sesame dumpling is ready.

8. Bring water to a boil over high heat, add the rubbed sesame seeds and stir constantly to prevent them from sticking. Turn off the heat when the sesame seeds float on the water.

9. Take out the cooked hemp noodles, pour them into the side dishes, stir well and serve.
