How to make European-style whole wheat bagels

1. Mix water and yeast and stir until the yeast is completely dissolved (water temperature 40℃). Mix all dry ingredients evenly, add melted yeast and water and knead into a smooth dough

2. Add butter and knead until the flour expands (a thin film can be pulled out). (Because this dough contains whole wheat, it is more precise than the white flour dough, and the bagel dough is less drier, so I only knead it to the expansion stage.)

3. Divide the kneaded dough into 9 portions, 80g each, roll into balls and let them relax for 15 minutes. (Note that you must cover it with plastic wrap when it is relaxed)

4. Use a rolling pin to roll the relaxed dough in two directions into an oval shape.

5. Turn it over and fold it inwards from the top and bottom thirds.

6. Then fold it in half and press the joint tightly with the base of your palm.

7. Roll the dough into a length of about 25cm and flatten one end with a rolling pin.

8. Make a circle and place the other end on the flattened dough, wrap it with the flattened part and close it

9. Place the dough on a baking tray lined with a cloth and place it in a warm and humid place for final fermentation for about 30 minutes. Boil sugar water while the dough is fermenting. Put sugar and water together and bring to a boil, then turn to low heat.

10. Put the fermented bagels in the sugar water, cook them face down for 30 seconds, turn them over and cook for another 30 seconds

11. Use a colander to remove the cooked bagels and drain them, then place them on a baking tray.

12. Immediately put it into the oven preheated to 200℃, middle layer, upper and lower heat, 20 minutes
