How to make Sichuan-style two-color tofu

1. Cut the tofu into pieces and blanch them in water (add two teaspoons of salt to the boiling water so that the tofu will not break easily)

2. Minced green onion, ginger, garlic, dried red pepper

3. Stir-fry the sauce with a little oil on low heat until the oil turns red, then add chopped green onion, ginger, garlic and red pepper

4. Add the two-color tofu and steamed fish soy sauce, and stir-fry carefully for a few times (use the back of a spatula to push it so it doesn’t break easily)

5. Add water, just enough to reach the surface of the tofu. Bring to a boil over medium heat and simmer over low heat for a while. (Adjust salt at this time, taste and adjust again)

6. Add water starch, stir well over high heat, turn off the heat, add high-sugar sesame oil, and stir well.
