Spiced Crispy Fish Recipe

1. Prepare the raw materials.

2. Wash the fish and cut it into pieces of appropriate size with a slanting knife. Add cooking wine and salt.

3. Add chopped scallion and ginger slices.

4. Mix well and marinate for half an hour to remove the fishy smell and absorb the flavor.

5.Mix flour and starch evenly.

6. Add a little water to make a thicker batter. The batter can be pulled into lines with chopsticks.

7. Add to the fish pieces.

8. Use chopsticks to stir evenly. (You can also add the batter piece by piece, but this is faster)

9. Heat a proper amount of oil in a pan. When it is 60% hot, add the fish pieces coated with batter one by one.

10. Fry for about one or two minutes until the fish pieces are 80% to 90% cooked, then remove from the heat.

11. Heat the oil in the pan again until it is 80% hot, add the fried fish pieces and fry for a while until the surface is golden and crispy.

12. Remove from the heat, drain the oil, place on a plate, and sprinkle with your favorite seasonings.
