1.1 Wrap the baking tray with tin foil. Make sure to wrap it. Don't be lazy and just cover it. Otherwise, the soup will still flow into the baking tray, which is very inconvenient to clean.

2.2 Ask the fishmonger to help you process the fresh catfish. After returning home, scrape off the mucus with a knife, clean the fish, and cut the fish into two halves along the fish bones from the abdomen, but do not cut the fish on the back. Apply sauce on the fish body and belly. I used the sauce for New Zealand roast chicken and chili sauce (the chili sauce is made by frying peanuts and chilies together, and sprinkle a little sesame seeds in it), and marinate it with onions, ginger, cooking wine, salt, sugar, and five-spice powder.

3.1 While the fish is grilling, prepare the ingredients. I chose potatoes, onions, pumpkin, and lotus root slices (you can also choose vegetables according to your preference). Cut the above ingredients into pieces and set aside.

4.2 Put green onion and ginger under the fish belly, brush the fish body with oil (I also put some butter under the fish belly), preheat the oven to 200 degrees and bake for 15 minutes (the baking time and temperature should be adjusted according to the temperament of your own oven and the size of the fish).

5. Put oil in the pot, sauté onion, ginger and garlic, then add potatoes, then pumpkin, lotus root slices, and finally onions. Add salt, sugar, five-spice powder and chili oil, stir-fry, then add water and cook for a while (it would be better if you add broth). If you can eat spicy food, you can add a few chilies and stew them together for a while.

6. Bake the catfish until it is 70% to 80% cooked, take it out, add the seasonings, put the soup in the pot, sprinkle some chili sauce on the fish, and add a few cloves of crushed garlic (I personally like the garlic aroma, but you can leave it out if you don’t like it). Bake in the oven at 150 degrees for 10 minutes (the time and temperature depend on the time the fish was baked for the first time, this time it should be baked until fully cooked).

7. If you like cilantro, you can decorate the fish with some. I don’t eat cilantro so I didn’t put it. It should be very beautiful with the color O(∩_∩)O~
