How to make Enoki mushrooms with dried tofu

1.1 After the water in the pot is boiled, add the enoki mushrooms and blanch for 2 minutes, then add the celery and blanch for about 10 seconds, then remove them together, rinse with cold water and drain thoroughly

2.2 Cut off the roots of the enoki mushrooms and rinse them clean. Cut the dried tofu into 1cm wide strips, remove the leaves of the celery, wash and cut into 4cm long segments, peel the garlic and cut into thin slices for later use

3. Put enoki mushrooms, celery and dried tofu into a container, sprinkle with salt, sugar, vinegar and soy sauce and mix well.

4. Heat the pan and pour in the oil. Heat over high heat. When the oil is 50% hot, turn to low heat and add the dried red pepper and Sichuan pepper. After the aroma comes out, add the garlic slices and fry until it turns golden. Immediately pour the oil into the mixed vegetables and mix well before serving.
