Method 1

Ingredients: 700g duck meat, 100g vermicelli, 1 pickled radish, 3 garlic cloves, a small amount of onions, appropriate amount of ginger, 3 green peppers, and appropriate amount of red peppers.

Before cooking, blanch the duck and wash away the floating foam. Add oil, stir-fry the ingredients until fragrant and dry the duck.

Add water and bring to a boil over high heat, then simmer over low heat for 30 minutes.

Add salt, chicken essence, soy sauce and a small amount of sugar, and cook for another five minutes.

1 : Chop the duck into pieces and boil it in water to remove the fishy smell.

2: Fire. Drain the oil. Add star anise. Tangerine peel. ginger. Fry for a while

3: Add the duck meat. soy sauce. Cooking wine. granulated sugar. Allspice. Add a little water. Cook until the duck is cooked through and remove from heat.

4: Blanch the rice noodles, add bone broth and duck meat.

Just to make delicious duck meat, three procedures are required. After boiling the duck meat in water, it is put into a pot and braised with 12 kinds of ingredients for at least half a day. The duck meat is braised into a caramel color, and you can tell that it is very tasty just by looking at the appearance. After braising, it needs to be smoked to infuse aroma and flavor. The duck soup boiled into a golden color is the soup base for duck vermicelli. No seasoning is added. With just one sip of the soup, you can drink in the essence of the whole duck.
