How to make vegetarian preserved meat radish cake

1.1 Wash and cut the radish into shreds. Boil a pot of water and prepare to blanch the shredded radish. Many places cook it by frying it, maybe it tastes better after frying, I choose to blanch it, which is healthier~

2.2 Soak the rice in water. I didn't weigh the water when I added it, I just added it randomly. After soaking, I weighed it and the total weight was 535g. After deducting the weight of 200g of dry rice, the water was 335g.

3.Cut the vegetarian sausage into small cubes. I don’t stir-fry this, I just add it directly into the batter. Vegetarian sausages taste good, but it is better to eat less processed foods

4. Put the soaked rice into a blender and blend it into rice milk. Radish cake is made of glutinous rice flour, also known as rice flour. This is hard to buy in the north, so you have to make it yourself. Originally, dry rice can be directly ground into powder, but the blade of my flour mill is broken, so I use soaked rice to make pulp, which is a bit troublesome.

5. Add corn starch and rice starch to the ground rice slurry in a ratio of 4:3:2. I searched a lot on the Internet about the ratio of batter. In fact, it doesn't have to be so strict. Just using rice flour is fine as long as it can be shaped.

6. Pour the blanched shredded radish into the prepared batter while it’s still hot, add the diced vegetarian sausage, pepper powder, bamboo salt and sesame oil and mix well. Do not control the water after the shredded radish is out of the pot. Be sure to pour it into the shredded radish while it is still hot. The purpose is to smooth the batter. It will be better if you add a spoonful of hot water. Generally, when making radish cake, you need to fry the batter, otherwise the batter will settle when steaming, and the cake at the bottom will be very hard, while the top part will be shapeless. If you have sticky rice flour and don't want to fry it, add hot water to make the batter. This is what I learned when I was making water chestnut cake before. Grease a heat-resistant container (I use microwave container), pour in the mixture and smooth it out. Then it was steamed. I didn't check the time, about an hour. Use chopsticks to poke it, if there is nothing sticking to it, it is cooked.
