400 grams of high-gluten flour, 4 grams of yeast powder, 1 egg, 4 grams of baking soda, 15 grams of fine sugar, 175 grams of milk, a little alkali, 4 grams of salt, 230 milliliters of water, 20 grams of white sugar, and 800 milliliters of vegetable oil.

2. Production steps

1. Put the yeast powder into 170 ml of warm water, mix well, and let it stand for a few minutes to dissolve.

2. Pour high-gluten flour into a bowl, add sugar and 20 ml of vegetable oil

3. Add the egg

4. Mix well with chopsticks

5. Pour the yeast water dissolved in step 1 into the flour

6. Pour and stir evenly until it becomes cotton-like

7. Then use your hands to knead it repeatedly into a smooth dough (the dough is a little hard at this time, it doesn’t matter), cover it with wet gauze or a lid, and ferment it in a warm place for about 2 hours

8. When the dough is fermented to twice its volume before fermentation, it means it has been fermented.

9. Put baking soda and salt in a small bowl, pour in 60 ml of warm water, mix well to dissolve

10. Then dip your hands in soda salt water and knead it into the fermented dough in batches.

11. Knead all the soda and salt water into the dough, and knead the dough again until the surface is smooth. The dough will be softer at this time.

12. Cover the dough and let it rise again until it doubles in size.

13. Use a small brush to apply a layer of vegetable oil on the chopping board

14. Take out the dough that has been fermented twice, put it on the oiled chopping board and knead it evenly (the dough will become softer after absorbing the oil), and then relax it for a while.

15. Then roll it into a rectangular dough sheet about 0.5 cm thick

16. Cut into strips about 2 cm wide

17. Stack the noodles together, press them in the middle with chopsticks, then pinch both ends of the noodles to stretch them a little, and then let them stand for 20 minutes.

18. Put vegetable oil in the pot, heat it over high heat, put in the raw dough of the fried dough sticks with sugar, stir it with chopsticks, fry until the surface of the dough sticks is golden, then remove and drain the oil.
