2.2 Wash the peppers, cut a circle around the stem with a knife, then pinch the peppers with your hands and press them into the peppers and pull them out to remove the pepper stems.

3.1 Chop the onion and garlic into small pieces. You can increase or decrease the amount of onion and garlic according to your preference.

4.2 Prepare the bean paste. If it is very dry and has no fluidity, it is best to dilute it with water to make it fluid.

5.1 Put the fried peanuts and sesame seeds into a fresh-keeping bag and use a rolling pin to knead them into peanut and sesame crumbs. Do not use a food processor (blender) to make them into powder. It is best to use hand-kneaded ones with granules, which will taste better.

6.2 Prepare the minced meat, don't use minced meat with fat, as it will be greasy. When it cools down, there will be solidified oil on the surface, so you must use pure lean meat, pork and beef are both fine.

7. Heat the wok, add cooking oil, add the minced meat and fry until it changes color. Pour a little cooking wine along the side of the wok and stir well to remove the meat smell.

8. Then add chopped green onion and ginger and stir-fry until fragrant, then pour in the bean paste and stir-fry until fragrant

9. Pour in the minced red pepper and mix well. After boiling, turn down the heat and add the rice vinegar.

10. When the sauce in the pot becomes thick (about 20 minutes), it is ready, then taste it, add salt and sugar, stir well and turn off the heat.

11. Add crushed peanuts and sesame seeds and mix well. The chili sauce is ready.

12. Put the chili sauce into a glass bottle while it is still hot and cover it. After it cools down, store it in the refrigerator. You can use it to mix noodles, rice, make spreads, etc.
