Spanish seafood risotto recipe

1. Debone the chicken thighs and cut them into pieces. Dice the tomatoes, green peppers and colored peppers. Cut the black olives into rings. Shell and split the shrimps. Cut the squid into rings. Chop 3/4 of the onion and garlic into small pieces.

2.12 Make shrimp soup: sauté shrimp shells and 1/4 onion shreds over medium heat until fragrant, then add 300ml of water and simmer for 10 minutes

3.21 Saute the chicken thighs in olive oil and add onions and minced garlic.

4. Add the raw rice and stir-fry over medium-low heat, then pour in 60ml of white wine

5. After the alcohol evaporates, sprinkle 1/2g saffron, 1.5 tablespoons salt, and 1.5 teaspoons white pepper for seasoning

6. Add tomatoes, green peppers, colored peppers, and black olives and stir fry evenly, then pour in the shrimp soup and stir well.

7. Pour the rice and soup into a baking bowl and evenly spread the seafood on top (the amount of soup should cover the rice by about 2cm)

8. Cover with tin foil and bake in oven at 180 degrees for 45 minutes until the soup is completely absorbed by the rice and cooked.
