How to make Shanxi fried pancakes

After all the dough is rolled, you can heat the oil pan and fry the dough cakes (in summer, you don’t need to let them rest after rolling, but in winter, the room is cold, so you can let them rest for 10 minutes before frying) (Sprinkle less flour when rolling, sprinkle flour frequently, and sprinkle too much flour, and there will be a lot of flour in the oil pan when frying. If you fry too much flour, it will burn and taste bitter)

14. Fry the pan in hot oil (use chopsticks to turn the pan over and fry the other side after it expands completely) until golden brown and then remove from the pan.

15. During the frying process, you will know that a good oil cake will be fully expanded (just like a pocket cake with two skins)

16. When eating, tear it open and turn it inside out so that there won’t be any oil on your hands (it’s especially delicious when paired with cold dishes)
