How to make lace dumplings (sauerkraut, green pepper and fresh meat filling)

1. Knead the dough first, add water and stir with chopsticks in one direction until it is fully kneaded. When there is no dry dough left, knead it into dough with your hands.

2. Cover with plastic wrap and let it rise for about half an hour.

3. Prepare fresh meat filling, sauerkraut, onion, ginger, and green pepper

4. Wash the pickled cabbage, squeeze out the water, chop it and set aside

5. Wash and chop the green peppers for later use

6. Chop the green onion and ginger

7. Put the meat filling in a bowl, add chopped green onion and ginger, light soy sauce, dark soy sauce, cooking wine, salt, thirteen spices, sesame oil, and stir in one direction with chopsticks.

8. Stir the meat filling until it is strong, then add sauerkraut and green pepper and continue to stir evenly.

14. Fold both sides and pinch them into a crescent shape.

15. Then hold it with your left hand, and pinch the lace from one end with the thumb and index finger of your right hand: roll it and pinch it, and do this for all the lace.

17. Wrap other dumplings in the same way. Boil water in a pot, cook the dumplings when the water boils, add water twice during the process, and boil the pot three times when the dumplings are cooked. Serve on a plate, and set aside a small dish for condiments. Put dumpling vinegar, garlic, and coriander in it, and eat the dumplings with the condiments. It's delicious!
