How to make cornbread

1. Prepare the materials.

2. Put the ingredients into the bread bucket, liquid first and solid later. Place the sugar and salt diagonally. Make a hole on the top and put in the yeast. Start the bread machine's kneading program for 30 minutes.

3. After the bread machine's kneading program is finished, take out the dough, add softened butter, and knead the butter into the dough.

4. Knead, rub, stretch and pound the dough with your hands to find a method that suits you.

5. Knead the dough to the "complete stage". At this time, the dough can be stretched into a very tough film that is not easy to break. Even if the film is broken, the hole will appear as a very smooth round hole.

6. Roll the kneaded dough into a ball, put it into a large bowl, cover the surface with plastic wrap or a wet cloth, and ferment at room temperature.

7. It is winter now, the room temperature is 24°C, and it will ferment for about 1.5 to 2 hours. When the dough has risen to 2 to 2.5 times its original size, dip your finger in flour and poke a hole in the top of the dough. If you pull your finger out and the dough neither collapses nor shrinks but remains in its original shape, the dough is well fermented.

8. Press the fermented dough with your hands to release the air.

9. Divide the deflated dough into three equal parts, roll into balls, and cover with plastic wrap for 15 minutes of intermediate fermentation.

10. Take a rice ball, roll it into an oval shape with a rolling pin, and put raisins in it.

11. Fold upwards at the lower 1/3 of the oblong dough.

12. Fold the upper 1/3 of the oblong dough piece downwards.

13. Rotate the folded dough 90 degrees and roll it into long strips again.

14. Roll up from top to bottom, and make three in turn.

15. Place the rolled dough at the bottom of the toast box. Place in the oven for final proofing.

16. When the fermented dough grows to 90% of the toast box, cover the toast box. Put it into the lower middle layer of the preheated oven, bake at 180°C for about 40 minutes.

17. Take out the toast box, turn it upside down on the grill, and remove it from the mold while it is hot.

18. Baked cornbread. When the bread has cooled to about the same temperature as your hand, put it in a plastic bag and slice it the next day.
