How to make soft bread

1. Add 50g of milk powder into 150g of water and stir clockwise. Then add egg white, sugar and salt and stir well. Pour flour, yeast and dough into the bread machine bucket and knead for 30 minutes.

2. After kneading the dough for 30 minutes, add the thawed butter and knead the dough for another 60 minutes.

3. Expand the hand mask and continue to ferment in the bucket until it is twice as large (about 30 minutes)

4. When the dough is doubled in size, start the dough kneading function and knead for 3 minutes to release the air. Then pour it on the countertop and knead for 15 minutes. When the dough feels fine, smooth and soft, weigh the total weight and divide it into 25 portions.

5. Roll into long strips, cut evenly into pieces and weigh each piece.

6. Flatten the balls and place them on a baking tray

7. Put a bowl of hot water on the bottom layer of the oven (reheat the water when it gets cold) and put the baking tray on the middle layer to ferment naturally (after 40 minutes)

8. Take out the water from the baking tray but do not take it out of the oven. Preheat the oven to 175 degrees. Touch the door and it should be hot and misty (2-3 minutes). Put the baking tray in the middle layer and turn the upper and lower fire to 175 degrees for 18 minutes (when the surface is golden and it smells the fragrance of bread, turn the order to bake). The firepower of the oven varies. Set the last 2-3 minutes according to the actual situation.
