Soft 65 degree Tangzhong bread~~~Tuna bread recipe

1. Ingredients: 195g high-gluten flour, 90g low-gluten flour, 5g instant dry yeast, 6g salt, 30g fine sugar, 12g milk powder, 60g whole egg, 65g water, 75g tangzhong, 45g unsalted butter;

17. Put the baking tray into the oven, turn on the fermentation function of the oven, put a bowl of warm water in the oven to increase the humidity, and ferment for about 45-60 minutes. When the dough is fermented, brush the surface of the dough with egg liquid.

18. Turn on the upper and lower fire functions of the oven, adjust the temperature to 180 degrees for the upper fire and 150 degrees for the lower fire, and adjust the time to 15 minutes. After preheating, put the dough into the middle and lower layers of the oven and start baking. The bread will be out of the oven after 15 minutes of baking.
