1. Separate three eggs, add sugar to the egg yolks and beat with a whisk, then add oil, then add milk and mix well. Finally, add low-gluten flour and mix until there are no particles.

2. After mixing well, it will look like in the picture. Don’t stir for too long to prevent the tendons from forming.

3. After the egg yolk paste is ready, make the egg white paste and add the sugar in three times. When it becomes coarse bubbles, add 1/3, when it becomes resistant, add 3/1, when it becomes ripples and fine, add the final 1/3. As shown in the picture, the time cannot be too long, otherwise it will fail. If the egg whites are beaten successfully, the cake is half successful.

4. Scoop out 1/3 of the egg whites and mix well, starting from the middle to the sides like cutting vegetables. Finally, add the rest and mix well.

5. Pour into the container. Mine is a six-inch mold. Shake 5 times to remove bubbles. If there are bubbles on the surface, poke them with a toothpick.

6. When making the egg white paste, remember to preheat the oven for ten minutes, to about 130 degrees. Then bake it for 40 minutes.

7. After baking, take it out and shake it a few times to prevent it from shrinking. Invert and let cool completely before unmolding.

8. Success. Super soft and delicious!
