The popular Japanese rabbit cookies are very simple to make and can provide the body with a variety of necessary nutrients. 1. The ingredients needed are as shown in the picture 2. Soften the butter at room temperature and beat manually until smooth. Add powdered sugar three times and mix; then add egg yolk and mix evenly. Sieve in low-gluten flour and stir evenly to form a dough. 3. The total amount of mixed dough is 315g. Divide it into two portions (157g each). Add matcha powder to one of the portions and knead well. 4. Divide the original dough into three portions: 18g, 18g, and 121g. The two 18g portions are bunny ears, and the 121g portion is a bunny face. 5. Cut a piece of wax paper 20cm wide. (For measuring the length of the dough after rolling) 6. Place two 18g doughs on a 20cm wide wax paper and roll them into 20cm long flat strips as the rabbit's ears; roll the 121g dough into a 20cm long oval as the rabbit's face, as shown in the figure below. 7. Cut the wax paper into a size of 40x20 cm and fold it in half to 20x20 cm; put the matcha dough into the folded wax paper and roll it into the size of the wax paper (20x20 cm). 8. The excess edges can be trimmed with a scraper and placed in the middle to continue smoothing. 9. Put the shaped dough in the freezer (freeze, not refrigerate!) for 5-10 minutes until the dough becomes hard. 10. Once the dough is completely frozen, you can start assembling. First, cut the matcha dough into three 1cm wide strips. 11. Fold it in the center of the oval bunny face. Wrap it with wax paper to avoid any gaps later. Press the two doughs together and flatten them with your hands. Glue bunny ears (two 20cm flat strips in step 6) on both sides of the matcha dough. 12. Cut two 6mm wide matcha strips and stick them to the outside of the rabbit's ears (starting close to the base of the ears) as shown in the picture. Wrap them with wax paper and press them flat. 13. Wrap the remaining matcha dough with wax paper and press it flat. Then freeze it for 20 minutes and then refrigerate it for 20 minutes. 14. After the entire cookie bar is frozen, cut it into 5mm wide slices. 15. Use black sesame seeds to stick out the nose and mouth. It will be easier to stick with a little water using chopsticks. It will be more cute if you stick the eyes into the shape of an "eight" as shown in the picture. 16. Preheat the oven to 170 degrees and bake for 10-15 minutes.
