Bitter Melon Clams

Ingredients preparation

Half a bitter gourd, appropriate amount of clams, shredded ginger, shredded green onions, and appropriate amount of sesame oil.

Method steps

1. Wash the bitter gourd, cut it into circles, and set aside the scallion and ginger;

2. Soak the clams in water and add a little salt, and wait for them to spit out the sand;

3. Add water to the pot, put in bitter melon and shredded ginger, then add the cleaned clams and bring to a boil over high heat;

Steamed Scallops with Garlic Sauce

Garlic scallops can be said to be a classic scallop dish.

Ingredients preparation

4 scallops, 20ml steamed fish soy sauce, 4 garlic cloves, 30ml sesame oil, a little green onion and ginger, appropriate amount of five-spice powder, red pepper, and 30ml cooking wine.

Method steps

1. Scrub the scallops back and forth, crack them open after cleaning, take out the meat and clean it;

2. Make a cut on the shellfish meat, then add cooking wine and marinate for a while;

3. Put onion, ginger, garlic and chopped red pepper in a small bowl, then add soy sauce and five-spice powder and mix well;

4. Put the soaked scallop meat in the cleaned shells and pour the mixed seasoning on the shells;

5. Put it in the steamer, bring to a boil over high heat and steam for about 5 minutes;

Tips

The scallops should not be steamed for too long, and be careful to remove black gauze and impurities when cleaning.

Ingredients preparation

A piece of tofu, half a pound of clams, an appropriate amount of wolfberry, 5 slices of ginger, a little green onion, and an appropriate amount of sesame oil, salt, MSG, and sesame oil.

Method steps

1. Wash the clams, cut the tofu into pieces, rinse the wolfberries, slice the ginger, and cut the green onions into flowers for later use;

500 grams of oysters, 30 grams of seaweed, appropriate amount of sesame oil, salt, pepper, ginger and coriander.

Method steps

1. Wash the seaweed and drain it for later use;

2. Wash and drain the oysters, boil water in a pot, add shredded ginger and oysters;
