How to cook yellow catfish with pickled mustard greens

A healthy diet and balanced nutrition are important guarantees for our body to stay healthy. The method of cooking snow vegetable and yellow catfish is actually very simple, and you can make it yourself if you are willing.

1. Soak the snow vegetables in cold water in advance to remove excess saltiness, wash off the mud and sand, and cut into pieces. Tie the green onions into a knot and cut two slices of ginger for later use.

2. The yellow catfish is called Angci fish in Jiangsu and Zhejiang areas, and is called yellow bone fish in Guangdong and Guangxi. There are also other names for it, such as yellow horn fish, yellow sand fish, yellow spicy fish, thorny bump fish, thorny yellow leg, and go tooth. When dealing with yellow catfish, the jaw is usually torn open to remove the internal organs and gills. In order to make the shape more complete, I decided to gut the fish and carefully remove the gills.

3. Heat a pan over medium heat, add appropriate amount of rapeseed oil and stir-fry the snow vegetable until fragrant and serve.

4. Cut some green onion and red pepper into thin strips, soak them in drinking water and roll them up, then use them to decorate the dishes.

5. Add appropriate amount of rapeseed oil and heat it until it smokes slightly. Add the fish and fry until the surface is crispy and drain out the excess oil.

6. After cleaning the pan, heat it up and rub it with ginger so that the fish will not stick to the pan when fried.

7. Add ginger slices and green onion knots, and pour in boiling water to cover the fish.

8. Cook over high heat for 10 minutes until the soup turns milky white. Add the fried snow vegetable pieces and cook for another 5 minutes.

9. Add some white pepper to season.

10. Pour into a soup bowl and garnish with shredded green onion and red pepper. It looks pretty good.
