Spicy spinach cold noodles recipe

1. Prepare the ingredients as shown in the picture. This is for two people (the thickness of the noodles can be selected according to personal preference)

2. Wash the onion and red pepper and cut into thick strips. Chop the garlic and put it together with the chili oil (you can mix the vegetables for the noodles as you like. I just happened to have these two on hand)

3. Add a little salt to the onion and red pepper to remove moisture and soften them.

4. Bring water to a boil, add a little salt and put in the noodles and cook for about two minutes (the cooking time depends on the thickness of the noodles. No matter what kind of noodles you make, remember to cook them until they are 80% to 90% done, so that the noodles will be chewy)

5. Drain the noodles and spread them on a clean chopping board. Pour two tablespoons of sesame oil on them to prevent them from sticking.

6. Use chopsticks to shake the noodles and let them cool down

7. Start mixing. Take a clean bowl, add noodles, pickled vegetable shreds, salt, soy sauce, vinegar, and minced garlic, oil, and chili.
