1. Remove the sand line from the shrimp, clean it, mix it with appropriate amount of salt, a few drops of white wine, and a small spoonful of water starch and marinate it for 20 minutes

2. Crack the eggs, separate the egg white and yolk, and keep only the egg white for later use (the egg yolk can be used to make egg tarts, so don’t waste it)

3. Add milk, salt, a few drops of white wine, a teaspoon of starch and a little sugar to the egg white and beat evenly.

4. Blanch the peas in hot water and set aside

5. Put a spoonful of oil in the pan, heat it up, add the shrimps and stir-fry. Take out the shrimps as soon as they change color.

6. Add the stirred milk and egg mixture into the pot and heat over low heat.

7. When the egg liquid solidifies at the bottom, start pushing it with a spatula until the egg liquid is completely solidified. Then add the shrimp and peas and stir-fry evenly.
